Tasting Notes

The 2021 Savigny-lès-Beaune La Dominode 1er Cru has another complex bouquet from Pavelot, predominantly red fruit infused with damp earth, iodine and pressed iris flower aromas. The palate is medium-bodied with firm but quite chiselled, almost chalky tannins, certainly very saline with a focused, peppery finish that leaves the mouth tingling for 60 seconds afterwards. This is aromatically similar to the Gravains though the spice nuances are a bit more prominent. The sleek and rich yet attractively detailed flavors exude a lovely minerality while also coating the palate on the nicely complex and highly persistent finale where a touch of bitter pit fruit character also slowly emerges.
