The 2021 vintage marks a return to a quintessential, cool-climate Chablis profile, shaped by a challenging growing season of severe spring frosts and a humid summer that demanded meticulous organic management from the Defaix brothers.
 
As the largest holders of the Côte de Léchet, the domaine produced a wine that Jasper Morris describes as "a joy throughout," characterized by its crystalline transparency and vibrant energy.
The wine presents an elegant bouquet of lemon zest, oyster shell, and white flowers, underpinned by the hallmark stony minerality of the Kimmeridgian slopes.
On the palate, a quarter-barrel fermentation provides a subtle, creamy weight that balances the vintage’s sharp natural acidity. The finish is remarkably focused and saline, echoing the "quintessential Chablis" identity that defines this emblematic producer.
